Wear Red Day takes place Friday - The Courier=Times

February makes us think of the color red – red hearts for Valentine’s Day and National Wear Red Day. National Wear Red Day is Friday, Feb. 7, and the American Heart Association wants you to wear red to raise awareness about cardiovascular disease.

Chances are that you know someone who has been directly affected by heart disease and stroke because cardiovascular disease claims the lives of 1 in 3 women, which is about one woman every 80 seconds. Join the Extension Office at 11:30 a.m. - 1:30 p.m. (or until the beans run out) Friday, as the Extension Community Association hosts its 10th annual pinto bean fundraiser, at the Person County Office Building Auditorium. Tickets are $5 for pinto beans, homemade cornbread, homemade desserts and tea. You can either eat-in or take-out.

We should also think about red fruits and veggies for their heart healthy nutrition. Fruits and vegetables are the best sources of fiber. Fiber helps keep your heart healthy and lowers your risk for heart attack and stroke. Fiber helps lower these risks by moving some fats and cholesterol out of your body.

To learn more about cholesterol and how to control it, join the Extension Office at our next Lunch N’ Learn workshop on Tuesday, Feb. 11. Dr. Tori Bradsher, local cardiologist, will serve as our guest speaker. The cost to attend this workshop is $5, and the money is due by Friday, Feb. 7.

Oven-Fried Chicken with Roasted Potato Wedges

Serves 4

1 whole, skinless chicken, cut into 8 pieces

1 cup fat-free buttermilk

1 egg (beaten)

1/2 cup whole-wheat flour

1/2 tsp. black pepper

1 tsp. paprika

2 large potatoes, cut into 1/4inch wide strips

1/2 tsp. garlic powder

1/2 tsp. dried parsley

Preheat oven to 425 degrees. Spray a wire rack with cooking spray and place over a baking sheet. Cut chicken in to 8 pieces. In a shallow dish, combine buttermilk and egg, whisk well. In a separate shallow dish combine flour, paprika and pepper, stir well. One piece at a time, dip chicken in buttermilk mixture, then coat with flour and place on a baking rack. Lightly spray chicken with cooking spray and bake 30 minutes, turn chicken and bake 20 minutes more until the temperature reaches 165 degrees. Arrange potato wedges on a cookie sheet sprayed with cooking spray. In a small bowl, mix garlic powder, pepper and parsley. Sprinkle herb mixture over potatoes and bake for 15 minutes. Stir and bake 15 minutes more until wedges pierce easily with a fork. Nutrition Information: 461 calories, 7.5g fat, 209mg sodium, 55g protein, 4g fiber, $2.04/serving
